Smoothies are a great way to pack in a lot of nutrients, control your hunger and satisfy your craving for something sweet. Even better is when you can use ingredients fresh from your own vegetable garden. While people typically associate smoothies with berry flavors, there are other options. Rhubarb is a tart early spring treat that you should definitely try in a simple, easy to make smoothie.
Strawberry Rhubarb Smoothie
1.5 cup chopped rhubarb
1.5 cup strawberries
6 oz yogurt
2 tablespoons honey
1 cup pomegranate juice
1/2 cup ice
First chop rhubarb from your vegetable garden into 1/2 inch cubes. Next, mix all ingredients together in a blender.

Not only is this smoothie delicious, it’s good for you, too! Rhubarb is rich in calcium, lutein, vitamin K and antioxidants. Just one cup of rhubarb provides you with 10 percent of your daily needed calcium. Lutein is an anti-cancer agent that also promotes good skin and eye health, and vitamin K is important for producing blood clots that stop injuries from bleeding excessively.
Pomegranate is also high in antioxidants and has been shown to improve heart health as well as reduce the risk for developing cancer. The flavonoids in strawberries can also boost heart health and decrease inflammation.
